You are an inspiration! I became a pescetarian back in 2017 and I don't regret it. Like you, I was vegan-curious and mindfully eating meat for some time when I decided to try this. All went well but because I was not eating enough protein I stuffed it with carbohydrates and got fat (but mind me, I wasn't into any kind of physical exercise back then). My advice is to find plant-based proteins that work for you and get it into your diet (even if shakes, powder). That would help you keep your muscles in shape and will keep you away from stuffing with carbs that bloat you. Hugs!
